Tomatoes are loved and cultivated world wide and are prominent in many cuisines. They are available in many different varieties, shapes, and colors.

Why is it good for my body? Tomatoes are excellent sources of vitamins A, C, and K. They also contain vitamin B6, folate, and thiamine. Tomatoes are the major dietary source of the antioxidant lycopene which is known to reduce the risk of heart disease and cancer.
Where does it come from? The tomato is native to Peru and was first cultivated by the Aztecs and Incas. Later the tomato was introduced to Europe by Spanish explorers.
What season is it fresh? Farm fresh tomatoes are abundant in the summer months, but many varieties are available year round in grocery stores.
How do I store and handle it? Tomatoes are best kept at room temperature on your counter top. Under-ripe tomatoes can be placed in a window sill to ripen. Once tomatoes are ripe, they can be stored in the refrigerator to extend their shelf life.
What are ways to eat it? Tomatoes are delicious raw in salads or on sandwiches or alone. They are also delicious roasted, stewed, stir fried, or turned in to sauces. Try Doctor Yum's Ratatouille or Tomato and Eggplant Salad!
