Green Lentil Chili

Need a quick, hearty meal to add to the rotation? Why not try this Instant Pot recipe starring green lentils. Combine a few fresh produce items, some canned ingredients, and dry lentils for a satisfying vegetarian chili. You can serve with a variety of optional toppings like shredded cheese, sour cream or plain Greek yogurt, cilantro, and corn chips.

Method

Set Instant Pot to saute and add oil, onion, garlic, poblano, mushrooms, and celery. Stir and saute until onions are translucent. Add taco seasoning, salt, and pepper to vegetables and stir to combine. Then add lentils, corn, black beans, tomatoes, tomato sauce, and vegetable broth and stir again. Put on the lid and set Instant Pot to "bean/chili" for 12 minutes with natural release. Once pressure is released, open and stir. Serve with optional toppings.
