"This recipe is based on a slow-cooker chili from Real Simple. I was searching for a good vegetarian chili and sweet potatoes are a favorite of mine. Sweet potatoes are a nutritional powerhouse, full of Vitamin A, potassium, and fiber. I love to bring this dish to a pot-luck or make this for a family who needs a meal delivered. It is also an easy dinner to put in the crock pot before you head out for the day. Heat olive oil over medium heat for a few minutes to warm the pan. Add the chopped onion, garlic, peppers, and corn - saute until soft.
Add sautéed veggies, spices, beans, and sweet potatoes to slow cooker. Pour diced tomatoes on top and add water. Give the ingredients a stir.
Set slow cooker for 7 hours on low, or set for 4-5 hours on high. After this time, the sweet potatoes should be cooked and the chili is ready to eat! Serve with a spoonful of sour cream or Greek yogurt on top and sprinkle with your favorite toppings like fresh tomato, avocado, cilantro, grated cheese, and corn chips to dip!
Babyfood Option:
This is a greats soft dinner which can be pureed to any stage your baby is comfortable with. Use a blender to blend it very smooth for new eaters or leave some texture as your baby advances. If you chill powder is very spicy, consider adding it at the end, after you remove a portion for your baby.
