baby spinach


Spinach is an edible flowering plant in the family Amaranthaceae. Its leaves are eaten as a vegetable!

Why is it good for my body? Much like other healthy greens, spinach packs a lot of nutritional value. It is an excellent source of vitamins K, A, B2, B6, E, and C. It also contains manganese, folate, magnesium, iron, copper, calcium and potassium. Spinach also adds fiber to your diet. No wonder Popeye loved his spinach!
Where does it come from? Spinach is native to Asia, but is now grown throughout the world. It is a versatile green with uses in many different ethnic cuisines with both raw and cooked applications.
What season is it fresh? Although it can be grown year round, its fresh greens are most readily available from March through May in the Northern Hemisphere and September through November South of the equator. Luckily, spinach can be found year round in grocery stores, fresh and frozen.
How do I store and handle it? Fresh spinach should be stored in the refrigerator. The leaves should be kept dry.
What are ways to eat it? Spinach is a favorite ingredient in the Doctor Yum kitchen. We use it in smoothies, soups, egg dishes, and any recipe where we can pack in some extra greens! Try Doctor Yum's Green Dragon Smoothie for a refreshing treat.
