Savory Oats with Mushrooms and Spinach

One of my favorite comfort foods is savory oatmeal. One of my best friends introduced me to the concept. It is so versatile, nutritious, filling, comforting and so quick to make it. Method

Heat your preferred oil in a pot and sauté shallot/onion, garlic and red pepper flakes. Add the mushrooms and spinach and saute for a few more minutes. Add the oats and the broth or water to the pot. Bring to a boil and stir for about 10 minutes until thick and creamy.
