Summer squash


Summer squash is a general term for quick cooking squash varieties with thin, edible skin. They come in an array of colors, shapes, and sizes; including zucchini, yellow, eight ball, and pattypan.

Why is it good for my body? Summer squash is a rich source of Vitamin A and C, magnesium, fiber, folate, riboflavin, phosphorus, potassium, and Vitamin B6.
Where does it come from? Squash varieties have been part of the human diet for 7,500 years, originating in the region encompassing present day Mexico. The word "squash" comes from a Narragansett word which translates to "eaten raw" which is one way summer squash can be enjoyed.
How do I store and handle it? Store summer squash in the refrigerator for one week. To freeze, wash and cut into 1/2 inch slices. Blanch for 3 minutes and chill quickly in ice water. Drain off excess moisture, package in freezer bag, and feeze immediately.
What are ways to eat it? Summer squashes are extremely versatile. They can be grilled, roasted, sauteed, stir-fried, spiralized, or eaten raw. They can be added to soups and stews or can be stuffed and baked!
