peas


Peas are a member of the legume family. English peas are removed from the pod to be eaten, but snow peas and sugar snap peas are eaten in the pod.

Why is it good for my body? Green peas are a good source of vitamin K, maganese, fiber, vitamin B1, copper, vitamin C, phosphorus and folate.
Where does it come from? Peas originally grew in western Asia and have been cultivated for 9,000 years. Their use spead to the Mediterranean, India, and China where they were dried and stored, providing a very important source of protein. In modern times, field peas gave rise to an assortment of tasty garden peas which we eat fresh and immature in the pods. Aside from the peas and pods, pea shoots are the earliest of the plant's growth and are delicious raw or cooked!
How do I store and handle it? Store fresh peas/pods/shoots in the refrigerator. To freeze fresh peas, blanch first, plunge into ice bath, and store in freezer bag.
What are ways to eat it? Peas are wonderful additions to most any soup or stew. They are a tasty addition to salads, as well. Snow peas and snap peas are often snacked on raw, sauteed, or used in stir fries.
