Beets, also called beetroot, is the root portion of the beet plant. Beets come in several color varieties: purple, red, golden, and candy cane striped!

Why is it good for my body? Beets are high in vitamin C, potassium, manganese, and vitamin B folate. They are also a good source of fiber, protein, and iron.
Where does it come from? Beets were a favorite in Ancient Greece and Rome. They have been cultivated around the world and grow well in cool weather, making them a staple in Northern Europe for many years.
What season is it fresh? Fresh beets are harvested all summer through late fall. The good news is canned beets retain a flavor that rivals fresh beets, giving you a good source of fiber, iron, and folate year round.
How do I store and handle it? Do not remove the tail from fresh beets until ready to prepare. Remove the greens from fresh beets and store them in a separate bag. The greens will keep for two days and the beets for up to seven days, stored in the refrigerator.
What are ways to eat it? Beets can be boiled until soft and are also delicious roasted. They make are a great addition to salads and yum bowls. Beets can be used in soups and can also be spiralized like other sturdy vegetables.
How do I introduce it to first-time tasters? Beets make a wonderful, colorful mash for babies.
