Cilantro Lime Lentil Soup

Method

Saute onion and garlic in olive oil in a stock pot over medium heat until translucent. Add carrots, celery, mushrooms, salt, allspice, and pepper. Add broth and stir in lentils. Bring soup to a boil then reduce heat and simmer for about 30 minutes until lentils are soft.

Whisk together cilantro, olive oil, and lime juice in a separate bowl. Swirl in mixture to top off soup.

Babyfood Option:

Soups are a great way to introduce many flavors to a baby at once and it's easy to get to that "just right" consistency by blending. Take a few spoonfuls and puree in a blender and as your baby is able to swallow more texture blend less, leaving some small soft lumps. For a thicker consistency, leave out some of the broth and blend more of the lentils and soft veggies.
