Sausage Hash with Cabbage & Chard

Here's a great recipe for a hearty breakfast that comes together quickly. Use leftover potatoes, add sausage, cabbage, chard, and a few kitchen staples to create a tasty, colorful hash!

Pour oil in 14 inch cast iron skillet or fry pan. Brown ground sausage, add onion and sauté until softened, add potatoes to pan and let them crisp a bit on all sides before adding carrots, cabbage, and chard. Sprinkle seasonings over entire mixture. Keep moving ingredients around in the pan until carrots, cabbage, and chard are wilted and cooked through. Serve with chopped scallion on top.
