Mix sun butter and honey in a large bowl until fully incorporated. In another bowl, mix all dry ingredients together. Add dry ingredients 1 cup at a time to sun butter and honey mixture until evenly combined. Use a small scoop to form bites, and roll into a tight ball with your hand. May be served immediately, or can be stored in the fridge for up to 1 week.
