Peachy Chicken and Basil

Nothing says summer like fresh peaches. This quick and easy one-pan meal is perfect in the summer months when fresh peaches are in season, The sweetness of the peaches, the savory chicken, the flavorful basil, and the creamy goat cheese are an amazing combination.

Method

  1. Halve peaches, remove pits and slice fruit into ½ inch thick pieces.
  2. Heat coconut oil in a large pan, add chicken thighs and garlic. Season chicken with salt and pepper. Leave chicken to sear on the first side, about 10 min.
  3. Turn chicken thighs and allow to cook for an additional 5 min, add peaches and 2 tablespoons of basil. Cook until peaches are softened, and chicken is cooked through.
  4. Add goat cheese until it starts to melt. Remove from heat and serve, garnish with remaining 2 tablespoons of basil.
  5. Chicken could be served over whole grain pasta or rice.
Babyfood Option:

This chicken dish has mild flavors for baby. The peaches and chicken thighs can be ground into a fine or smooth texture with the sauce or shred chicken into bite-sized pieces for finger food eaters.
