Roasted Broccoli with Lemon and Parmesan

Roasting broccoli brings out an amazing flavor that is no joke! Broccoli can sometimes take on a mushy consistency when boiled or steamed. This recipe introduces a new way to cook this classic veggie that is sure to turn the whole family into broccoli lovers!

Method

Preheat oven to 425 degrees. Cut broccoli into florets, removing excess stalks. Place florets on a rimmed sheet pan so that they form a single layer. Toss garlic with the broccoli and drizzle with 3 tablespoons olive oil. Sprinkle with salt and pepper. Roast for 20 to 25 minutes, until some crisp and some of the tips are browned. Remove from oven and immediately toss with 1 tablespoon olive oil, lemon zest, lemon juice, and parmesan.
