Roasted Fennel

Fresh fennel is an often overlooked vegetable in the produce section. We would love for more people to give it a try! It's great in soups and salads, but also makes an excellent side dish on its own.

Preheat oven 425 degrees. Slice the fennel bulb into 1-inch chunks and toss with olive oil, salt, pepper. Grate parmesan over top if using. Roast until tender and brown in places, about 15 minutes.
