Roasted Fennel

Fresh fennel is an often overlooked vegetable in the produce section. We would love for more people to give it a try! It's great in soups and salads, but also makes an excellent side dish on its own.

Method

Preheat oven 425 degrees. Slice the fennel bulb into 1-inch chunks and toss with olive oil, salt, and pepper. Roast until tender and brown in places, about 15 minutes. You can also try finely grating parmesan on top before roasting as well!
