Roasted Delicata Squash Chips

Delicata is a wonderful variety of winter squash that is named for its delicate skin, which can be eaten just like summer squash and zucchini. These roasted delicata rounds make a beautiful and delicious side dish to your favorite dinner.

  1. Preheat oven to 400 degrees
  2. Cut off stem end and bottom end of the squash. Slice into ½ inch rounds and cut out the seeds from the center of each round.
  3. Toss cut slices of squash with olive oil and seasonings, and spread out in an even layer on a rimmed baking sheet lined with parchment paper
  4. Roast at 400 for 12-15 minutes, until well browned turning the slices over halfway through the cooking time
  5. Once browned, remove from the oven, sprinkle a bit of salt on top before serving.

Scoop out the flesh of the squash and blend or fork mash until soft enough for new eaters. This can be a great food to mash with other soft foods to add more textures and tastes.
