Magic Banana Cookies

These cookies are one of our favorite ways to use overripe bananas. They only require a few ingredients and come together quickly, but still taste amazing. That's why we call them Magic Banana Cookies! They're also suitable for a variety of dietary needs and allergies as they're vegan, gluten-free, egg-free, dairy-free, peanut-free, and tree-nut free. We love the combination of dried cherries and chocolate, but feel free to switch up the mix-ins depending on what you like, what you have on hand, or what fits your dietary needs. Other dried fruits or chopped nuts would be great options. We love adding cashews!

This recipe can easily be doubled to make a larger amount.

If you're cooking with kids, this is also a recipe that's easy for them to get involved in. Younger kids can mash, measure, and mix. Older kids can make the recipe independently if they know their way around the kitchen.

Method

  1. MAKE THE COOKIE DOUGH. Preheat oven to 350°F. To a medium bowl add mashed banana, oats, vanilla, and flax meal. Stir to combine. Add dried cherries and chocolate chips and mix again.
  2. BAKE THE COOKIES. Line a baking sheet with parchment and use a spoon or scoop to dollop dough evenly across the surface, making about 12 cookies. Bake for 15 minutes. Cool and enjoy!
