Kale and Apple Slaw

Love coleslaw but want to try something new? Dr. Yum's Kale and Apple Slaw is for you! This side dish is a great way to try kale along with some familiar flavors and a tangy dressing!

Method

In a large bowl combine kale, apples, and onion. To a separate smaller bowl, add vinegar, honey, mustard, poppy seeds, salt, pepper, and olive oil and whisk to combine. Add dressing to slaw mixture and stir. Let slaw sit for at least 15 minutes at room temperature, and up to two hours in the refrigerator.
