Gingerbread Bites

Each month, we have a few days with open kitchen hours in the Dr. Yum Project Kitchen when we prepare and test new recipes to add to our website. Method

Add oats, almond meal, and spices to a food processor and pulse until mixture is like a fine flour. Next add dates, vanilla, and honey and pulse until the mixture is the consistency of wet sand. Use a small scoop (roughly a tablespoon) and roll into balls. Bites will keep well stored in an airtight container in the refrigerator for a week, if they last that long!
