Crunchy Cauliflower Salad

There are not many recipes that feature cauliflower in its raw form. We searched high and low to find a way to highlight raw cauliflower for our preschool curriculum. It's an interesting combination of ingredients that end up working really well together! This is a featured recipe from our Preschool Food Adventure.

METODÓ

Remove cauliflower from stalk and finely dice. Dice apples and add to a large bowl with the diced cauliflower. Remove avocado from skin and set aside in a separate small bowl. Tear or chop parsley and mint. Add to large bowl with cauliflower and apple. Zest limes into a separate small bowl and add lime juice. Then mince shallot and add to lime juice with honey, oil, and water. Whisk dressing together. Pour dressing over the salad and mix gently. Add the avocado after salad is mixed. Top with optional chickpeas for an extra crunch!
