Crunchy Cauliflower Salad

There are not many recipes that feature cauliflower in its raw form. We searched high and low to find a way to highlight raw cauliflower for our preschool curriculum. It's an interesting combination of ingredients that end up working really well together! This is a featured recipe from our Preschool Food Adventure.

Method

In a large bowl combine cauliflower, apple, parsley, and mint. For dressing, to a small bowl add lime zest, lime juice, shallot, honey, mustard, olive oil, and water. Whisk to combine. Pour the dressing over the salad and mix gently. Add diced avocado. Top with optional chickpeas for an extra crunch!
