Brown Sugar Baked Spicy Salmon

This is a salmon recipe I threw together one night after a long active winter day. The kids just loved it, so I tried to re-create the recipe it the best I could. Several dry ingredients are blended together and then rubbed onto to the salmon. This is a similar method to how ribs are made. My kids have grown to love salmon, although fish was not their favorite thing at first. If your kids are not too keen on fish yet, start with mild white fish like tilapia, and eventually make your way to salmon. We try to eat salmon at least once a week because of its high omega-3 fatty acids and Vitamin D. Tonight I used 1/8 tsp. cayenne pepper in the rub and a few of the Tiny Tasters found it a bit spicy. I would use a bit less if your family is not a fan of spiciness.

METODÓ

Preheat oven 375 degrees. Spray or brush the salmon lightly with olive oil and place skin side down on cookie sheet or large pan misted with oil. Mix the remaining ingredients together in a small bowl until well blended. Spread the rub evenly on the top of the salmon (if your fillet is smaller, you may not need the whole mixture). Bake 20-25 minutes, until it is cooked through and flakes easily with a fork (may be less time if individual fillets are used so check after 15 minutes).
