At the Dr. Yum Project Kitchen, we believe that just about any produce item, but especially root vegetables, tastes amazing when roasted. Radishes are no exception! Radishes are often an afterthought relegated to a topping on the salad bar. We hope you will try these and make roasted radishes the star side dish to your dinner.
Preheat oven to 350 degrees. To a large bowl, add radishes, olive oil, thyme, salt, and pepper. Mix well to combine. Place mixture on a baking sheet and roast for 35 minutes, stirring halfway through. Once done, serve and enjoy!
