Crispy Smashed Potatoes

These spuds are fluffy in the middle and cripsy on the outside like french fries but they roast in the oven with just olive oil, salt and pepper so they are simple to make and healthy too! This recipe is a family favorite from Dr. Yum board member and food photographer, Laura Visioni.

40 red potatoes (10 small potatoes per person, the smaller the better)

Method

Boil the potatoes until just tender.
Drain.
Coat a cookie sheet with olive oil and arrange potatoes on the sheet.
Press each potato with the heel of your palm until it just cracks and slightly flattens.
Brush additional olive oil on top of each potato so each is thoroughly coated on each side and sprinkle with fresh-cracked pepper and course salt.
Roast in the oven at 475 for 20 to 25 minutes or until crispy on the bottoms and slightly browned on the tops.
