Brussels Sprouts & Sweet Potato Skillet

This is a hearty recipe that would work great for any meal of the day! It is inspired by a dish called Hippie Chick Hash created by a chef in Stauton, Virginia. We added our own twist, but were so happy to get the secret spice mix from the chef herself!

Method

In a cast iron skillet or frying pan, heat coconut oil over medium heat. Add red onion and poblano pepper and sauté for 3 minutes until they begin to soften. Add brussels sprouts, sweet potato, and parsnip to the pan and continue to move the vegetables around in the pan for an additional 10 minutes, to let the harder vegetables soften. Finally, add the chopped apple and seasonings. Stir for an additional 5-7 minutes, until everything is well-cooked. Serve with an over-easy egg on top.
