"This recipe is based on a slow-cooker chili from Real Simple. I was searching for a good vegetarian chili and sweet potatoes are a favorite of mine. Sweet potatoes are a nutritional powerhouse, full of Vitamin A, potassium, and fiber. I love to bring this dish to a pot-luck or make this for a family who needs a meal delivered. It is also an easy dinner to put in the crock pot before you head out for the day. METODÓ

Heat olive oil over medium heat for a few minutes to warm the pan. Add the chopped onion, garlic, peppers, and corn - saute until soft. Add sautéed veggies, spices, beans, and sweet potatoes to slow cooker. Pour diced tomatoes on top and add water. Give the ingredients a stir. Set slow cooker for 7 hours on low, or set for 4-5 hours on high. After this time, the sweet potatoes should be cooked and the chili is ready to eat! Serve with a spoonful of sour cream or Greek yogurt on top and sprinkle with your favorite toppings like fresh tomato, avocado, cilantro, grated cheese, and corn chips to dip!
