Kale and Apple Slaw

Love coleslaw but want to try something new? Dr. Yum's Kale and Apple Slaw is for you! This side dish is a great way to try kale along with some familiar flavors and a tangy dressing!

Method

Wash and dry kale. Split leaves from ribs and slice into thin strips and add into a large bowl. Cut apples into matchsticks, and add to the bowl. Thinly slice red onion and add to the bowl. In a separate smaller bowl, combine vinegar, honey, mustard, poppy seeds, salt, and pepper. While whisking, add oil and incorporate. Add dressing to slaw mixture and stir. Let slaw sit for at least 15 minutes at room temperature, and up to two hours in the refrigerator.
